The overall vision for Trace Brewery was to breathe new life into an old structure while still honoring its colorful past. Originally built in 1910 as a brass and bronze foundry, it morphed into various forms over the years including a film developing studio and an underground music venue called The Shop.
The goal of the design was to maintain the original industrial feel while also creating a modern space to meet. Old growth wood roof trusses were cleaned up and exposed along with the original brick walls. Modern mechanical and elaborate lighting systems really bring space into the 21st century.
The roof structure of an old addition was completely removed to create an outdoor courtyard with new concrete stadium seating. Three new roll up glass doors were installed opening the interior to the courtyard.
In addition to the traditional beer making techniques brewed on property, patrons can spend time in the Koelschip room, located off the open-air courtyard via large glass doors, where Belgian Style beer is spontaneously fermented in a large open stainless-steel tub in the center of the room. The open-air brewing technique pulls out notes from the tongue and groove exposed pine walls and ceiling. Once completed it is aged in wooden bourbon and wine barrels displayed in the tap room on large steel racks.
